The recent BBC series ‘Chronicles of Nadiya’ had us enthralled with stunning images of Bangladeshi life and the fascinating dialogue of Nadiya Hussain, last year’s winner of The Great British Bake Off. Nadiya’s passion for cooking stems from childhood when her mother’s home cooked food was enjoyed at family mealtimes. Bangladeshi cuisine uses a plethora of spices and as Nadiya was filmed preparing a Biryani for the Captain and crew of a paddle steamer, we were thrilled to see that Indian Bay leaves were one of the ingredients she was using. Indian Bay leaves are completely different from the Mediterranean type commonly used in Europe. They have both the flavour and aroma of cinnamon and cloves and should be crushed before use to release these characteristics. Indeed, they feature in many Indian recipe books, yet are notoriously difficult to find in the UK.
