Tandoori Masala is a fruity, sweet and warming bouquet of spices. The traditional Indian spice blend is often mixed with yoghurt, then used as a marinade for chicken, red meat and fish.
Traditionally, this spice mix is used in meals cooked in a clay oven known as a tandoor. This is a popular cooking method in many Indian cultures. The marinated chicken is often used when making a Tikka or Butter Chicken. It gives the meat a lovely red exterior and a moreish, savoury flavour.
Aside from tandoori dishes, Tandoori Masala Powder can also be used as a seasoning for various grilled, roasted or pan-fried dishes, adding a rich flavour and vibrant colour to meats, seafoods, vegetables and even vegan alternatives such as tofu. More creatives cooks and chefs have even experimented with adding this Masala Powder in a marinade for grilled pineapple, or as a seasoning for popcorn!
Tandoori Masala is found in Delia Smith’s “How to Cheat at Cooking” cookbook. She uses this specific blend in her Spiced Chicken Masala with Coconut Sambal (page 122) and Curried Parsnips (page 162).
