Dopiaza Spice Blend

Dopiaza is a mild to medium spice blend, that has a balance of sweet and tart notes. Dopiaza translates to two onions and is a traditional Indian dish. During the cooking process, half the onions are caramelised with the meat (traditionally Lamb or Mutton) and the other half are used to make the sauce.

Like Dhansak, Dopiaza has a connection to Persian cuisine due to a group of Persian Muslims called the Mughals. They ruled over the Indian and Pakistan empires from the 1500s – 1600s when the dish was created. Today, Dopiaza is prepared across Pakistan, Sindh, Punjab and Bangladesh regions in India, as well as Iran and Afghanistan.
