Asafoetida, also known as hing and is incredibly pungent with a likeness to garlic and onion. Native to Central Asia, Asafoetida derives from the resin of the Ferula.

This plant is native to Iran and Afghanistan and the process to produce the resin is quite labor-intensive and requires skilled workers, which makes asafoetida a relatively expensive spice. Despite its strong odour, it has a flavor that is similar to that of leeks or onions and is used as a flavoring in many dishes. With a long history of use in traditional medicine and is believed to have antispasmodic, anti-inflammatory, and antiflatulent properties.

The tart spice is traditionally used within Indian cooking and primarily fried in a little oil to mellow the flavour. Furthermore, according to Norwegian folk law, it can help to fend off colds and the flu!

I used to buy Asafoetida from a local shop as a substitute for onions.Unfortunately it contained so much wheat flour it triggered my IBS.

looking online I eventually found my way to Seasoned Pioneers,one of the few reputable companys selling Asafoetida without any wheat in it.
I bought 3 packs of ground Asafoetida and got it delivered a couple of days later.

This stuff is extremely potent compared to the previous brand I bought. I used to add about 1tsp to a big pot of stew but don't try that with the Asafoetida from Seasoned Pioneers.Try to use really small amounts at first,a pinch or 1/16 of a tsp might be enough.

I haven't got around to try it that much, except for in a sauce, but I have to say I'm really satisfied. Being on a low FODMAP diet and avoiding onion and garlic, I've really missed the flavour those two give to a dish, but asafoetida compensate to a certain degree. However, it's very potent, so try a little first before adding more. I've seen a couple of other asafoetida products on the market, but they contain wheat (gluten), which this doesn't.

I died and went to heaven. Not being able to eat garlic nor onion due to ibs, I thought my food had to be dull and tasteless. But not any more! Thank heavens for Asafoetida!
