La Kama is a sweet, peppery blend used in the Tangier region of Morocco. It’s much simpler than Ras el Hanout, containing just five ingredients: ginger, cinnamon, turmeric, ground black peppercorns and nutmeg. Due to its simple flavour, the spice mix works excellently in tagines as an alternative to Ras-el-Hanout.

Although it tends to be much less known and underrated in comparison with other Moroccan spices such as Ras El Hanout, La Kama spice blend is well worth a look. The cuisine and spices found specifically in Tangier are unique, with clear influences from Arab, Berber, African, Spanish and French cultures.

La Kama adds a wonderful Moroccan flavour to its dishes. It is famously used in the Maghrebian harira soup, eaten during Ramadan. The aromatic blend also flavours vegetable tagines that contain carrots, squash and chickpeas.

Smells lovely but have yet to use it.

I just use soy sauce (reduced salt) sweet soy sauce (Kecap Manis), squeeze of both ginger and garlic puree, mix well together and add a teaspoon of La Karma. It depends on how much chicken you are using as to how much soy sauce etc you use, the more you experiment the more you can judge the amount.This works well on both chicken breasts, thighs or drumsticks but you need to marinate for about an hour and turn over in the marinade half way through.You then cook either in the oven, a griddle pan or even better on the BBQ weather permitting!!

All of your spice blends that I use are brilliant for marinades, the secret is just keep practicing with different ideas, you can’t go wrong.
