Cajun Blackening Spice Blend is unapologetically bold, brave and full of flavour! Paprika, red chillies and cayenne filter through robust notes from mustard, cumin and thyme.
Blacken Cajun Seasoning is used across Louisiana to grill and barbeque meat, fish and vegetables. The food is dipped in melted butter and then liberally coated in the Cajun Blackening Spice Blend before cooking. This technique creates a delicious, flavourful crust that gives the spice blend its name.
While the intense, high-heat cooking process creates a beautifully smoky, charred flavour on the outside, the meat will keep tender and juicy on the inside. This very specific blackening technique is thought to have originating in Louisiana, popularised by chef Paul Prudhomme in the 1980s and then quickly adopted as a signature cooking style in Cajun and Creole cuisine.
