Garam Masala Balti, or Balti Masala, is a highly aromatic blend with cumin, coriander seeds, cinnamon, clove and black peppercorns. Balti Masala originates from Northern Pakistan and was adapted in the UK during the 1900s. Its name derives from the serving dish, which is a metal bowl with two handles.
This spice mix is vital to make Balti dishes, which are typically made with a whole host of ingredients including chicken, mushrooms, aubergine and chana dal. A classic Balti is inexpensive to make. It is spicy and can be mellowed with a dollop of natural yoghurt. Balti dishes are usually garnished with plenty of fresh coriander and mint.
