In Vietnamese cuisine, “kho” means to braise, simmer or stew – it’s a very popular cooking technique. Whatever meat or produce you choose (beef, pork, tofu, seafood and vegetables all work well), it is braised or simmered in the flavourful sauce until the liquid is mostly reduced, leaving the main ingredients coated in a thick, rich sauce.
The sauce contains a harmonious relationship of our hand-crafted Malay Curry Powder and vital Vietnamese flavours of galangal, Thai holy basil and lemongrass.
The primary ingredient of Kho sauce is fish sauce, which is a condiment made from fermented fish or shrimp. This is a fundamental element in Vietnamese cooking, providing a savoury umami flavour to many different dishes
