Sambar or Sambhar powder is an interesting South Indian spice mix. It has a nutty flavour due to the addition of Channa dal and Urad dal. The chillies, mustard and fenugreek seeds give the spice mix an overlay of spicy and earthy flavours.

Across southern India, Sambhar powder is typically prepared at home by roasting the whole spices and grinding them down into a fine powder – a process we follow closely. This allows for customisation, with each cook adjusting the proportions and spice levels according to their own preferences.

Across different regions in Southern India, you’ll find that this curry powder varies slightly. For example, a Tamil Nadu-style sambhar spice mix might feature a stronger presence of black pepper, while Karnataka-style sambhar spice mix may incorporate specific local spices.

This curry powder is used to make a traditional Sambar – this dish is often described as a cross between soup and dhal. This Indian spice blend also provides a great base flavour to a multitude of dhals and Indian soups. Learn about lentils here.

Authentic and fragrant

I am of Indian origin and I found this to be an excellent sambar powder. It's flavour reminds me of some of the excellent sambar I have eaten in South Indian restaurants. It is better than some of the Indian brand sambar powders like MTR. Well done! It would be really helpful if you could please add a sambar recipe to your website using this particular mix. Thanks

Sambhar powder is an essential in my store cupboard, it adds an instant oomph to any lentil or bean dish, I usually use it in place of turmeric in vegetarian dishes.
I also add it to traditional Scottish red lentil soup and the flavour boost is immense.

I still use this to make a version of Delia's dhal - a little oil, finely diced onion and carrot, a teaspoon of Sambhar, and a couple of handfuls of red or puy lentils (or a mix of both), and water to cover. Simmer gently, checking often, then season with a teaspoon of 9 meals from anarchy veg stock (www.ninemealsfromanarchy.co.uk). Finish with a tablespoon of creme fraiche or double cream, or some cubes of creamed coconut. Great chilled on crackers or oatcakes the following day, like a veg pate.
