Ingredients

  • 120g rice or plain flour
  • Half a teaspoon
  • baking powder
  • 1 teaspoon ground ginger
  • 3 tablespoons sugar
  • 150ml beer
  • 150ml coconut milk
  • 4 sweet bananas (peeled and cut in half and cut again lengthways)
  • Vegetable oil for frying

Method

a wonderful recipe for Vietnamese fried bananas!

Step 1

Sift the flour with the baking powder in a bowl.

Step 2

Add the ground ginger and sugar. Beat in a little of the beer and coconut milk to make a smooth paste.

Step 3

Gradually beat in the rest of the coconut milk and beer to form a thick batter. Leave to stand for 20 mins.

Step 4

Pour enough vegetable oil for deep frying into a wok or a heavy-based shallow pan.

Step 5

Dip each piece of banana in batter making sure it is well coated.

Step 6

Using tongs, place them in the hot oil turning to make sure they are golden brown all over. Drain the bananas on kitchen paper.
