1 chicken breast
1 handful breadcrumbs
2 tsp Peri Peri Seasoning
½ tsp salt
½ tsp pepper
1 tsp paprika
1 egg, beaten
A dash of cooking oil
Impress the family with this spicy Peri Peri Chicken Schnitzel!
In a dish, add the Peri Peri Seasoning, salt, pepper and paprika to the breadcrumbs. Mix well.
Slice the chicken breast in half lengthways.
Lay down a sheet of cling film on the counter. Take a slice of chicken breast and lay it flat on top of the cling film. Using another sheet of cling film, cover the chicken and make sure the sides are sealed.
Using a meat tenderiser, hammer the chicken firmly so that it spreads out thin and flat.
Place the chicken breast in the dish of beaten egg, making sure it’s evenly covered.
Next, transfer the egg-covered chicken breast into the dish of breadcrumbs, evenly coating it.
Heat a dash of cooking oil over a medium flame and gently place the chicken breast in the pan. Cook for approximately three minutes on each side, or until golden brown and the chicken has cooked through.
Serve with chips and salad.
