For the tacos:
300g diced chicken breast
2 tsp Mexican Adobo Rub
Olive oil
4 large tortillas
For the guacamole:
1 ripe avocado
½ onion, chopped
2 cloves garlic, crushed and chopped
Handful of fresh coriander
Juice from 1 lime

For the salsa:
8 small tomatoes or 4 medium tomatoes, finely diced
½ onion, chopped

In a pan, heat a dash of olive oil on a medium heat.
Add the chicken and stir until half-cooked.
Add the Mexican Adobo Rub, mix well and continue cooking until the chicken is cooked thoroughly.
In a bowl, add all your ingredients and mix until it forms a smooth paste.

To assemble your tacos, add a portion of chicken, guacamole and salsa onto a tortilla. Add toppings of your choice (we love sour cream and refried beans).
