2 tbsp butter
2 shallots, sliced
1 onion, diced
2 garlic cloves, sliced
500ml vegetable stock
1 tin tomatoes
300g red lentils
2 tbsp Garam Masala
Salt and pepper to taste
Melt the butter in a large pan over a medium heat.
Add the onions, shallots and garlic and cook for 5 minutes or until the onion is soft.
Add the vegetable stock, tin of tomatoes, lentils and garam masala.
Bring to a boil, then reduce the heat and simmer uncovered for 30 minutes or until the lentils are tender. Stir occasionally.
Season with salt and pepper according to taste and serve.
