10 eggs
1 onion, sliced
4 cloves garlic, minced
2 medium tomatoes, sliced
2 small potatoes, sliced
1 medium courgette, sliced
1 handful of freshly chopped chives
2 tbsp full fat milk or cream
2 handfuls of cheese, divided (cheddar works best)
2 tsp Chilean Alino
1 tsp salt
1 tsp black pepper

Follow these instructions to make an amazing Frittata recipe!
Step 1:
Preheat your oven to 200 degrees celsius.
Step 2:
Heat a generous glug of olive oil in a pan over a medium heat. Cook the onions for around 10 minutes until soft and transparent.
Step 3:
Add the garlic and cook for a further minute.
Step 4:
Stir in the potatoes and cook for around 7 minutes until soft when poked with a knife.
Step 5:
Add the courgettes and cook for a further 2 minutes. Remove from the heat.
Step 6:
Crack open the eggs into a large mixing bowl. Beat until just mixed.
Step 7:
Add the vegetable mixture, tomatoes, the Chilean Alino, salt and pepper, and mix until everything is well coated.
Step 8:
Add the milk and a handful of cheese, and mix well.
Step 9:
Add a dash of olive oil into a baking tray or pan, coating the bottom and the sides.
Step 10:
Pour the egg mixture in and top with another handful of cheese.
Step 11:
Bake for 20 minutes, or until the middle is slightly jiggly when the pan is shaken.
Step 12:
Sprinkle a handful of freshly chopped chives on top and serve with a slice of chunky bread.
