250g of carrots, peeled and grated
60g raisins
Handful of chopped fresh mint
250g of chickpeas, rinsed and drained
1/2 red onion, finely diced
1 garlic clove, chopped
200g feta
1 tsp crushed sumac berries
60ml of extra virgin olive oil
1 tsp lemon zest
4 tbsp lemon juice
60ml freshly squeezed orange
2 tbsp honey
1/2 tsp salt
1 tsp of black pepper
1/2 tsp ground cumin
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground coriander
1/4 tsp ground allspice
1/4 tsp ground cayenne pepper
Combine all ingredients for the dressing in a large mixing bowl. Whisk together for a minute or so. Set aside.
Mix all the salad ingredients into the mixing bowl containing the dressing.
Serve with your favourite Moroccan couscous and kebab.
