Ingredients

1 tbsp olive oil
2 tbsp Fajita Seasoning
2 chicken breasts, cut into strips
1 red onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 small tin sweetcorn, drained
400ml vegetable stock
400g penne pasta, uncooked
100g cheddar cheese, grated
Salt and pepper to taste
Sour cream to serve

Method

A good idea for kids to try a bit of spice…fajita pasta!

Step 1:

Heat the oil in a large pan and add the chicken, cooking for around 7 minutes until cooked through.

Step 2:

Add the red onion, peppers and sweetcorn and mix well.

Step 3:

Add the Fajita Seasoning and stir, cooking for a further 2 minutes.

Step 4:

Add the vegetable stock and let it reduce.

Step 5:

Meanwhile, cook the pasta and drain. Set aside.

Step 6:

Once the chicken mix has reduced and no liquid is remaining, add in the pasta and stir well. Add salt and pepper if needed.

Step 7:

Serve with a dollop of sour cream.
