3 large or 4 small ripe bananas, mashed
200g sugar
1 egg
60g melted butter
200g plain flour
1 tsp baking soda
1 tsp salt
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
Handful of raisins (optional)
Make this Cinnamon and Nutmeg Banana Bread for an afternoon treat to share with friends and family!
Preheat the oven to 160°C.
In a large mixing bowl, combine the bananas, sugar, butter and egg.
In a separate bowl, mix the baking soda and flour together before adding to the banana mixture.
Add the cinnamon, nutmeg and salt and mix everything together until just combined, making sure not to overmix.
When the batter is half-mixed, add the raisins and continue to stir.
Lightly grease a bread tin before pouring in the batter.
Bake in the oven for around 1 hour, or until a skewer inserted into the middle of the bread comes out clean.
