1 400g can mixed beans, drained and rinsed
1 400g can kidney beans, drained and rinsed
1 400g can chopped tomatoes
1 tbsp brown sugar
1 onion, diced
2 tbsp olive oil
2 tbsp Crushed Chipotle Peppers
½ tsp salt
½ tsp pepper
4 eggs
A handful of chopped chives
To serve:
Tortillas or rice
Love eating beans, this chipotle chilli beans recipe with baked eggs is tasty, healthy and quick to cook.
Step 1:
Heat the olive oil in a deep frying pan. Add the onions and cook for around 5 minutes until soft.
Step 2:
Add the beans, chopped tomatoes, sugar and Crushed Chipotle Peppers. Simmer for 15-20 minutes until thickened. Season with salt and pepper.
Step 3:
Make 4 holes in the mixture and crack an egg into each one. Cover and simmer for around 5-10 minutes until the eggs are cooked how you like them.
Step 4:
Garnish with chopped chives and serve with tortillas or rice.
