2 portions tortilla chips
6 small tomatoes, halved
½ onion, roughly chopped
2 garlic cloves, roughly chopped
300ml vegetable or chicken stock
1 tbsp olive oil
Chilaquiles – These wet nachos are addictive!
Step 1:
Add the tomatoes, onion, garlic and broth to a blender and whizz until smooth.
Step 2:
Add the oil to a large skillet and heat over a medium-high flame. Pour the salsa into the pan and add the Central American Spice Mix. Cook for 10 minutes until slightly thickened, stirring occasionally.
Step 3:
Add the tortilla chips to the salsa and stir carefully until the chips are well coated. Cook for around 3 minutes, adding salt if needed.
Step 4:
Transfer the chips into a dish and top with your choice of fried egg, guacamole, sour cream, refried beans and grated cheese.
