4 slices sourdough bread
Sliced cheese (cheddar or mozzarella work well)
Mustard
Margarine or butter
For the onions:
1 onion, thinly sliced
2 tsp Caribbean Jerk Seasoning
3 tbsp oil
For the beef:
4 slices of your favourite sandwich beef
3 tsp Caribbean Jerk Seasoning
¼ lemon, squeezed
2 tbsp oil
In a bowl, mix the Caribbean Jerk Seasoning with the oil.
Add the onions to the bowl, making sure they’re well coated with the marinade.
Fry on a low heat for around 10 minutes until the onions are soft and browned.
In a bowl, mix the Caribbean Jerk Seasoning with the lemon juice and oil.
Add the beef to the bowl, making sure each side is well coated.
Fry on a medium heat for around 4 minutes on each side.
Preheat the oven to 200°C. Take your slices of bread and spread butter or margarine on all sides.
Spread a layer of mustard on the inside of your sandwich.
Add a helping of onions, followed by 2 slices of beef and a layer of sliced cheese.
Close the sandwich and cook in the oven for 5 minutes, or until the cheese has melted.
