6 oz / 170 g Pecan halves
1 egg white
1 to 2 teaspoons Cajun spice blend
2 tablespoons soft brown sugar
1) Preheat the oven to 150 Celsius or Gas Mark 2. Line a baking sheet with baking parchment.
2) Beat the egg white until frothy then mix in the Cajun spice blend and sugar. Stir in the Pecan nuts.
3) Spread out onto the baking parchment and bake for 10 minutes, then stir them around and put back into the oven for a further 10 minutes.
4) Serve once cool.
