Biriyani is a world-famous Indian dish, renowned for its easy preparation. It consists of long-grain rice, spices and lamb, chicken, fish or vegetables. The dish is accompanied by a rich Indian gravy. Its origins are uncertain as there are ties to both Persian and Indian cuisine.
The preparation of Biryani masala typically involves layering partially cooked rice and marinated meat in a heavy-bottomed pot called a “handi” or a “biryani kadai”. In the final cooking process, the layers are then sealed with a tight-fitting lid that traps the steam, allowing the flavours to infuse and the rice to absorb all of that meaty, aromatic essence and juices.
Nowadays there are many versions of Biriyani because regions in India make the dish differently. Some prominent examples of the dish include Hyderabadi, Lucknowi (Awadhi), Kolkata, and Sindhi Biryani. Over the years, the dish has gained immense popularity throughout the world. It’s beloved in India, Pakistan, Bangladesh, Sri Lanka and many Middle Eastern countries, as well as any region with a notable Indian diaspora.
